Sorry, I wasn't clear. I meant the immune reaction to the virus/spike protein.

  That's possible obviously, and a reasonable avenue to pursue. Other possible causes (possibly in conjunction with spike, and/or other things) are the various viral vectors or lipid nanoparticles (a powerful adjuvent, even if it's not described like that by the manufacturers), as well as some less common ingredients for vaccines like polyethylene glycol.
