My garden came with an old white transparent apple tree, which produces very tart apples. They are one of the first apple varieties for the year and are harvested around St. Jacob's day at the end of July.
It is an obscure variety, because the apples have to be processed within a few days of harvest and are prone to bruising. But, if you have the chance to find them, they are excellent baking apples. I particularly enjoy them in pies and strudels, but they are excellent for apple sauce.
