I think there are some modern rogue-likes that use hex layouts rather than square grids. I'm not sure if there is anything more creative than that, but I would be surprised if there weren't. There is a sub-culture out there who are making more modern versions of the traditional rogue-likes. See the r/roguelikedev subreddit for a lot of interesting info on this.
