Someone surely need to maintain these machines, but the application doesn’t have to. The point is that these networks can be run by anyone, without the org(uniswap labs/EF) or dapps needing infra of their own if they redesigned to rely on zkp, oracles or chain data. And as long that number of random validates/miners doesn’t stoop too low - it means there exists enough incentives for these random players to continue doing so.
