Tipping only benefits a few select front of house staff and the owners of the establishment.
It really just benefits the owner of the establishment.
The difference between front of house pay and back of house pay in American restaurants is alarming. I am convinced that no other group of workers in the US is treated as poorly as back of house kitchen staff.
With that said, my wife and I are always generous tippers because we realize that you engage in an unwritten social contract each time you dine out.
But it’s just a way for all of us to subsidize the restaurant owners.
You can go downtown to any restaurant in Auburn, Alabama and find plenty of servers walking home with $300+ per 4-5 shift. The kitchen employees are lucky to earn $120 during their 10 hour shifts.
