If a company stores data about you, they WILL give it ALL to law enforcement. How to avoid this? Don't store any data, as simple as that. Use p2p E2EE services. The server will only orchestrate between connections but no actual data will pass through it, giving the cops absolutely nothing except connection logs! Sure, they can still see when you connected and who you requested to talk with, but there are many mitigations and (unless they actively sniff you) they won't even have a byte of data you actually sent to that person
