The alternative view is that those state of the art models are using technology/architectures/paradigms with an inherent limit and are very far away from automating all of those jobs. At the end of the day, all the demos leave me with a feeling of disappointment. Current image synthesis models appear to be useless beyond doing experimental art for fun and novelty, chatbots still suck and copilot just (sometimes) replaces googling, but not developers or their education.
