I think there's one real thing that's important to decide first which is "What would make this interesting for you and what defines useful for you?" The most useful things in the world are often absurdly boring. Vanta is a great example of tremendously useful company that strikes me as being nearly paint dryingly boring. I'd focus on that first, and once you move from a generic mindset to some specific subset of things, I bet you'll find something. For what it's worth, I really struggled so I ended up deciding to start something with some friends, and that has really succeeded for finding something interesting.
