Have you asked? That would be the first thing I'd do. Make it known you want to do xyz. If a project doing that comes up and you are not chosen for it ask why.

Not in a confrontational way but like, "Hey manager, I expressed an interested in doing xyz over the last three months during our one on ones. project x recently started which focuses on doing y. I wasnt chosen to work on that project. Is there a specific reason why?" Or go find a new job where they tell you you will be working on xyz. It's likely just because you are good at working on legacy work and unless you make noise you wont be moved.
