Raspberry Pi made a desktop Linux distro that I think really gets the desktop idea down quite well. It was developed to make it seamless for children to work on the rpi SMB's at school, so the learning curve is not as steep as it may be for other Linux distributions. A few years back, they developed the desktop version, which basically looks and feels exactly the same as the rpi SMB version. Perfect for anyone using both types of hardware, with the side effect of being able to use it competently without first reading the manual.
As Linux tends to be, you can modify it as you wish in the same way you can with absolutely every other Linux distro. I have clfswm running on one of mine, and that's about as far off the beaten path as you can possibly get.
It never gets mentioned in the Linux comparison charts, but it is so well developed for desktop use that it should be. It is based on Debian, so you have access to just about everything you can think of as well.
