I put a full, persistent Gentoo install on a usb drive (like a little 250GB flash drive) with a universal (e.g. livecd, BIG) kernel and disk encryption, and even that only takes about 30 seconds to get to the login screen on any relatively modern hardware.

Some distributions make some ... interesting choices w/r/t performance. I guess.
