The only technical things that i often asked in my interview, is how to refactor and unit test a code mess. Ability to refactor things is the only good technical thing that i need to confirm and require from a developer. So, don't ask, but tell ! Bring some mess to the developer for them to hack around until it's good. I call this more proactive process, rather than just asking.
