To a large degree we can solve this with a data provenance infrastructure. It should be possible to have every step in the chain cryptographically sign images, video, audio and documents in a way that it can be proven no AI meddling has occurred. For an iphone it would not be a big leap to have the hardware sign video directly through the secure enclave. How you combine that with data privacy though, I have no clue.
