central Europe here: You have to take the vacation! You can take a few weeks in the new year, but not everything and you have to consume them. Why "have to"? Because it's by law forbidden to bully employees into taking money instead of going on vacation. To never have to deal with this, most employers are very strict wrt vacation days :)
