I'd really recommend an fx2 logic analyzer. Basically anything called logic analyzer on Amazon or Aliexpress with 24 MHz sample rate, 8 channels and for less than 15 bucks.
They work with the open source sigrok software and basically just DMA the io to the host, thus the sampling rate and the cost, but can record for dozens of minutes.
