This type of restriction is often more about the mental, "lifestyle" part than biology.
It's an alternative to calorie-counting, you automatically eat much less.
I went meat-only for a few months and then slowly transitioned to low carb (relative to western diets) paleo-ish.
I now enjoy eating vegetables I never touched before. Penn Jillette said the same thing about the potato method, it was more about palet-cleansing for him than actually losing weight on the potato itself.
It also gave me the opportunity to learn about every ingredient as I added it back into rotation.

I grew morbidly obese on >80% homecooking.
It's actually about making the right choice, 10 to 20 times per day.
If you go potato-only, meat-only or whatever - you're eliminating a lot of bad choices.
In the end, reading a lot about food allowed me to make informed decisions and that seems to work for the long haul.
