We know about the pathogens which are likely to make you sick from fecal-oral transmission. We have studied them pretty well because they are common. The most likely candidate for a pathogen that could be spread through toilet plumes is called norovirus, and it is extremely studied. We have so far not found any clinical evidence of infection through toilet plume from norovirus. This includes in cases where water jet toilets produce many times more aerosolization in public bathrooms where lids are not even an option.
