I want a flowchart editor which doesn't give me carpal tunnel but I also want (some) control over the layout. So far Graphviz is the closest. Plain text in, flowchart out. I would say "you can't beat that" but I think that you actually can. I think that it is possible to create a good interactive tool for editing DOT, it's just hard and probably would be pretty niche.
