A lot of good ideas come through trial and error. After a certain while of using a product a specific way whole new pathways can open up. It's really difficult to know what your end product is supposed to look like, if you're working on something novel. If you're building something that already exists, sure, then you can structure and optimize it during the design phase (and should).
