I solved this by getting a pressure cooker. Every night before bed I prep my instant pot. I put in enough rice and beans for three meals the following day with diced vegetables, a spoonful of coconut oil, a little salt, and a shitload of spices. Then I put the lid on, seal it, and set a timer so that it starts cooking half an hour before I wake up. By the time I'm done shitting, shaving, and showering I've got three meals a day for me and my wife ready. I dish out breakfast and then put the leftovers in containers for lunch and dinner. If we want some meat, we cook that up fresh, but most of the time it's enough to slice up a hard-boiled egg and some cheese.

If it's too bland, you haven't added enough spice. My wife always thought brown rice and beans were too bland until I started making it for her, because I cook it with garam masala, garlic powder, parsley, and and black pepper.
