Been developing my app (https://github.com/webreaper/damselfly https://github.com/webreaper/damselfly) on an M1 Mac for the last 2 years, and a Macbook pro prior to that. Development experience is pretty good - been using VS for Mac 2022 since Sept 2021. As has been mentioned, there are some challenges around drawing stuff, but nothing that ImageSharp and SkiaSharp haven't covered admirably.
