Everything is a trade off, you are correct that something like screws/tabs etc would indeed make things bulkier - but how much bulkier would be determined by the design. I am confident that the designers at Apple could figure out a compromise to make self repair much easier - not necessarily tool-less! - while keeping the phone pretty damn close to current proportions.
