Ehh, I’m far from a pro cook, but I do have an induction burner as I prefer it to my traditional electric range.
I would still pick gas if I had the option. I realize this is a niche reason, but cooking with a wok is pretty much useless on any type of electric burner. This is the extreme example, but gas is going to be more forgiving for imperfect cookware.
I really don’t like the sound of induction. I have gotten used to it, but there’s a slight whine. Could be the burner I have, so take that with a grain of salt.
Last, the glass top is going to wear worse than a gas top.
I love the properties of induction and do think it’s a much better burner than traditional electric, but it’s not perfect.
- Doxin 4y ago> I really don’t like the sound of induction I quite like how on my induction cooktop I can hear if a pan isn't on the coil right. You can hear it seeking for the right frequency to use. Of course a gas stove is much more tolerant to misalignment in the first place.
