Our GitLab docs state "Math written in LaTeX syntax is rendered with KaTeX" https://docs.gitlab.com/ee/user/markdown.html https://docs.gitlab.com/ee/user/markdown.html but I'm not sure it isn't just using MathJax under the hood.
