Amphetamine (https://amphetamine.en.softonic.com/mac https://amphetamine.en.softonic.com/mac) solved this for me. I turn it on, with “allow system sleep when display is closed” disabled, and it’ll work with the laptop closed, using only the two connected monitors as display.
