My own TL;DR; summary, Software has had dev-shop consultancies/agencies for years, got a large spike in work / demand then pull in extra bodies at short notice, need 24/7 support, contract in some folks on the other side of the globe.
This model seems to be coming to the restaurant. Not a crazy idea IMHO
