You are just mentioning the ear, not the cumulated ear + brain (perception). While the physical hearing declines, the perception can gets sharper with time. Age makes hearing very high frequencies impossible but thankfully that’s not the main range where instruments play. (And yes, I know about harmonics) Audio quality is not just about high frequencies thankfully.
