There's a coffee chain here in Brooklyn [1] that has been spreading very quickly who has targeted opening in small spaces, or as short term pop-ups inside other spaces, without much (or any) seating. This probably limits those behaviors you're talking about. They've raised close to $70 million for some reason [2][3]. There's a couple a few blocks from me but I've never tried them, as I just make coffee with an aeropress at home. When I was younger I'd hang out at coffee shops and pretend to be getting work done, but not so much as an adult.
