I recommend the retrotink devices - specifically the 2x PRO and 2x SCART which are very simple, very tightly focused devices. I have an RGB modded SNES connected with 21-pin to (modern HDMI) and it looks amazing. If you have more exacting requirements or want a lot of configuration flexibility the OSSC may be a better choice but if you know exactly what your input/output is and it is supported, get the simple retrotink device.
