I think a stream format could work if it was heavily focussed and structured. The main developer of SerenityOS [1][2] I know streams the work they do fairly often, and aims to keep segments within an hour, and focussed on a single issue. I think an ideal structure would be 1 hour of focussed work, where you explain what you're doing, followed by a Q&A session where you could go into detail about the decisions you made.
Typically with most programming streams what happens is you watch people silently mash the keys on their keyboard, whilst listening to music, and occasionally talking to themselves about what they're doing, and not really imparting that much knowledge or interacting much.
