There already is an ideal version of Windows 10, without windows store, metro, cortana, xbox live, ads etc. etc. It also will get support and security updates but zero feature updates or changes for 10 years. It's called Windows 10 LTSB. They dont sell this useful version of windows to normal people though, only to corps via a volume license. This is one of those situations that behooves one to pirate it, and there are plenty of copies of this + crack on torrent sites.
