I don't believe you need consent to log, generally speaking. Sharing PII-laden logs with a third party? Sure. The line is somewhere between that, but typical server-side logging usually won't require any sort of consent. GDPR didn't make access logging illegal.

It didn’t make it illegal but it put some serious restriction on what and for how long you can log stuff.
