Annecdata: I was editing a movie in FCPX on my 27" iMac (Intel) w/64 GiB and it kept crashing. Reluctantly, I restarted on my 13" MBA (M1) and finished with no problems. Granted there might have been something specific to my circumstances, but I was very impressed with the performance on the lowest-spec M1 laptop.
IMO, the M1 laptops are fairly priced, but the Mac Pros have been poor value in the past. I'm really curious to see if that changes.

I have a 2013 Mac Pro I paid around $3,800 for. Still using it. Last fall it had a significant performance drop, which I attribute to the Intel security mitigations (it was apparent after a security update to Big Sur). The current Mac Pros are very much out of my range, but the processors in those things are so expensive. They might be able to lower the price a lot, to the level that the 2013 was at. Hoping, at least.
