Likely large providers such as Coinbase will roll NFT insurance and custody into their existing crypto projects, for premium collections with sufficient liquidity and cultural status. Should Color NFTs reach values that make obtaining insurance on it rational, then I'm sure we will see such activity. As for the possibility of stealing Color NFTs or NFTs in general, unsophisticated users could be tricked in confidence scams to reveal their Ethereum private key which controls access to their NFTs.
