I'm currently firmly in the same club as you. I have a 13' work laptop with two USB 3.0, plus one USB-C, but the thing weight is just about 2 pounds (1 kg). Booting SSD + not so much ram, but the thing flies even starting from hibernation. Sometimes I miss having the damn LAN port, but you're right, for datacenter and field work, heavy hardware is a no go. I do know a number of people in the field using macbooks air for the work.
