I'm an engineer at a global software company that specializes in data storage. We've had no issues with adherence to GDPR and have servers in the EU. Infact, we can't even access the EU production logs. We have to ask an employee in Europe to screen share. Is that unnecessary? No clue. Point is, this ain't hard to do.
