  Not until you kill it and fluids start moving around. (There are a few things you can do to keep the meat from degrading, like immediately draining the blood and the bladder.) The liver is the target because it's the most calorie dense meat in the shark, if not the entire ocean. At least out of what orcas eat. Plus it's probably delicious.
