This didn't happen for me, unless you are talking about a different cumulative update. I just installed KB5010795 and Firefox is still my default. Edge has been popping up a modal on startup lately to reset your default browser, are you sure you didn't click that? Not that it's your fault, but if you don't open Edge it doesn't bother you in my experience.
