Any decent book or course on programming microcontrollers. Ideally, if you can get a cheap microcontroller test board, you can quickly see and appreciate what your instructions do. That said, using assembly in a PC is quite a different abstraction and it depends realistically how much you will use it on your course. If it is just a module, I wouldn't worry too much about it and just look at the college's recommendations.
