Many people think in this way, whereas in fact they are being profiled by Google's services all the time - whenever they send a message to their colleagues via Google, when they visit a website using GA, when someone texts them from an Android phone etc.

Aside from that, those are 2 different things: Google inserting itself everywhere to spy on people and people requiring Google's (dis)services. If a person does not make use of Google services, then it can be argued, that they do not need or require Google services, even, if Google decides to spy on them. Being spied upon does not provide the person with any service and as such, they do not rely on it at all.
