Years ago, I remember using GA on a project. Was unhappy with GA's realtime availability, so we wrote our own backend for it and stored all the analytics on our own infrastructure. Worked without any real issues. Didn't have to stop using GA on the frontend, either. Just had to point the frontend GA at our own endpoint. Theoretically, this would make usage of GA compliant with GDPR, too, I beleive.
