Another vouch for Salmon and Bannock. Mr. Bannock is a North Vancouver food truck, often does some interesting fusion things. Kukum Kitchen in Toronto seems to have closed over the pandemic, but I previously enjoyed their food, and their website is still up - I hope they are able to reopen.
