I'm currently using CryptPad as a Google Doc substitute for collaborative documents, and it's done well by me.
What I especially love is that I'm able to send links (over an E2EE channel like Signal) with people who aren't especially computer savvy and it all works out quite seamlessly with them. No accounts needed, etc...
