I was thinking about this at a previous company, when I took a look at our questions and thought the same thing. I realized that when given to a candidate, we don't just throw the question out and come back an hour later asking if they've solved it. Part of the job of the interviewer is to keep the candidate on track, and gently guide them in the right direction if necessary. All of the questions were much more reasonable (and approachable) when there is someone who is motivated to help you reach a solution within the allotted time.
