My 2cents: Rule #1, use what you know only if you already have paying customers. You can rewrite it afterwards if required. Rule #2, if you don't have paying customers and want to build the software anyway, then use the software stack for which you will be able to very easily get developers so that you can then concentrate on marketing/sales/fundraising.
