Apple generates a random email address for each individual subscription, and forwards it to your inbox. If you cancel the subscription, then the forward is changed to a blackhole.
Not only does this give you a nice way to really cancel, it also means you can track down if someone sold your address to a spam list. Or if it accidentally leaks, rotate it.
