That must suck. Crashes are not part of my experience on either of my 16GB M1s nor on my 32GB M1 Max. The only software that I found vexing is Docker, so I don't use it. This is major and is a good reason to be wary of these Macs. I left off Docker 6 months ago on M1. Things may be better now. 16GB was fine for a secondary machine. 32GB is now enough for me to be productive as a primary machine.
