I’ve done both and am currently doing both. Like other commenters have said it depends heavily on a lot of your specific circumstances. I’d be happy to give you more advice if you can say more about who’d be managing it, what your current costs are, and roughly what your use case is, etc. For some generic advice though, I’d say renting dedicated servers is typically the way to go unless you have a specific reason you want your own hardware. In my case, my reason is experimenting with RDMA over Converged Ethernet for machine learning and I couldn’t find machines with GPUs and capable interconnects for rent. If you don’t have specialized requirements though any provider is probably fine
