It's hard to answer as it's very personal and there are other elements to take into account. My first advice would be that if you can double your salary, do it. We don't know what tomorrow will be made of. Also you don't mention work-life balance and quality of relationships with colleagues which to me is more important than interest in the product. That being said, you can also keep interviewing and try to find a job which checks all the boxes.
