Raw histograms are a no brainer, I don't understand why this isn't already commonplace. 16 bit raw is another matter. If you're not getting 16 bits of dynamic range from the pixels, all you'd be doing is getting a more accurate reading of the noise. That just adds a lot of expense for no perceivable gain.
